Ingredients
  

  • 60 g chicken thigh
  • 2 green onion
  • 2 egg
  • 1 tbsp soy sauce
  • 3 tbsp mirin (sweet sake)
  • 3 tbsp water
  • 1 pinch soup stock powder

Instructions
 

  • Chop the green onions into 1-inch pieces.
  • To prepare the chicken, remove the bone, tendons, and skin, and cut the meat into small pieces.
  • Mix mirin, soy sauce, water, and soup stock powder to make a sauce.
  • Mix 2 eggs gently (If you mix too vigorously, the eggs may not become fluffy)
  • Heat the pan with oil and stir-fry chicken and green onions for about a minute.
  • Pour the sauce mixture into the pan and let it simmer for 2 minutes.
  • Place the egg whites.
  • Once the egg white is cooked, add the yellow yolk to the pan.
  • Let it simmer for 1 minute. (To avoid making the edge too hard. High temptress can cause the egg to become too firm)
  • Place all the cooked ingredients over the white rice. (Including the sauce)
