Ingredients
  

  • 30 g chicken thigh
  • 2 green onion
  • 1 tbsp soy sauce
  • 1 tbsp mirin (sweet sake)
  • 1 tbsp sake
  • 1 tbsp sugar
  • 1 pinch salt
  • 1 pinch pepper

Instructions
 

  • Cut the 2 green onion into 2-inch pieces. (Use only the white portion.)

  • Trim the 30 g chicken thigh. Take out bone and tendon, but not skin.

  • Sprinkle 1 pinch salt and 1 pinch pepper on the meat.

  • Heat pan with oil over medium heat.
  • Add the chicken – skin down.
  • Check that the skin is lightly browned and flip the meat.
  • Add the green onions.
  • Once the 30 g chicken thighreen onion turn golden brown and are cooked through, take them out of the pan.
  • Reduce heat to low and add 1 tbsp sake, 1 tbsp mirin (sweet sake), 1 tbsp sugar and 1 tbsp soy sauce.

  • Coat the meat thoroughly with the sauce.
  • When the sauce starts to thicken, it's time to add the green onions.
  • After cooking the meta for ten minutes, remove the pan from the stove. Cover the chicken and set aside for 5 minutes.
